"Angel food" cakes are made using lots of egg whites, beaten to peaks and then lightly folded into a simple flour/sugar mixture. It puffs up into a cloud-like cake which is, in fact, heavenly with berries or crushed fruit or even simple whipped cream frosting.
Give me a coconut cheesecake and then go away, because I'll begrudge you every bite. (That crab cake/jalapeno relish sounds FINE!)
