Yesterday just did a stirfry little bit of chicken filet and lots of veggies.
Today its roast spuds, broccoli and kangaroo steaks,
tomorrow I think pork chops mashed potatoes and green beans.

My mom used to make that as a quick meal when we had after-school activities. Funny, I was usually the ONLY one with after-school activities. It was usually band/band front. But now I'm hungry for that meal!
Being from the south, we used to have beans & rice, mixed together too. YUMMY!!

Being from the south, we used to have beans & rice, mixed together too. YUMMY!!

Could you give me your mom's recipe for homemade scallops...they're one of my favorite spuds....:-6
Tonight I made a spicy pork loin and then added some of it to a tomato & basil wrap with homemade, spicy salsa. On the side we had home fries and salad. I also made red-velvet cake with yummy blackberries. Naturally, I had to venture down to my cavernous wine cellar for a bottle of champers.

Wow, good for you...does the soul good to rest:-6 We used to have the whole week off in February, but now we get out early in June. We have only had snow flurries and 1 icy day. Think we're a bit east of the snowline:D

I'd be glad to... if you tell me how you make your pork loin! I've been wanting to buy one & make it, but I've never cooked one before.
For my potatoes:
I peel & slice about 5-6 potatoes. Coat them with flour, salt & pepper & butter. Then fill with milk to cover the potatoes. Cover with aluminum foil & bake at 425 for (gosh, it's been a while!) probably about 30 minutes. Take the foil off & bake an additional 10-15 minutes. I usually just bake them right alongside the meatloaf, so that's how I time mine! But you should be able to judge by using a fork.
I really need to make that meal again!! I actually haven't made it in a few years, since it's just me now.

Thank you Observer for the scalloped potato recipe...it seems very easy and delish. Thinking back now I realize that my mom made it that way also.
Cooking the pork loin is easy. You coat it with good extra virgin olive oil and add your special rub to it. I like a rub called "Grill Mates Pork Rub" (You can find it in any supermarket) It's a McCormick product. It has chili peppers and all sorts of spices. I than put the pork on aluminum foil on a large baking pan and bake for about 35 minutes at 425 degrees. I put one of those thermometers in the meat and when it's 175 degrees it's done.

I made my meatloaf & scalloped potatoes last week!! They were DELICIOUS!! I even managed to clog up the drain with the grease & cheese from the meatloaf... OOPSIES! The landlord wasn't very happy, but he's a nice guy.
