Finally a glorious morning here in Irelaand Ke. Just had my brekkie off eggs, toast, oj, coffee & a bowl of cornflakes. I diddn't care for teh Irish brekkie myself adn the sausage is not great either. I gues I'm just to picky.

July 1st is Canada Day here, unfortunately the day off for it is whenever it falls, so no long weekend like you have.

Rather warm today KE....kids went to the pool. I think they were dying to get away from the house & see their friends:yh_rotfl....try spending 6 hrs in a car full of 3 teens & an 8 yrs old.

Has any of you peeps ever been to Chincotique (I know I spelled it wrong)...gawd talk about horse world. Went camping there one year when Laura was 3 yrs old...the horses ate our food right out of the tent.:-5 They invaded the coolers but didn't get the beer:wah:

Hello again Kathy Ellen. All my animals are doing great thank you for asking. I ride my horse (Midnight) every day. We go out early in the morning and then again later before it gets dark.

I can't spell it either but, yes, I have been there and the horses are just beautiful. The horses were on the beach and in the parking lot. Magnificent and so glad I got to see them.

I can't get into camping anymore either...too disgusting...mud, rain, etc. Yes a 4* hotel is for me also. The Days Inn in Ireland was great...they actually had internet service in the rooms...we paid 10 euros for 24 hrs. The other hotel we stayed stunk.

I have indeed, Odie but it's nice to be back. Those umbrellas look kind of wonderful to me - like flowers. We're in winter here, so it should be cold and wet - but aren't you meant to be in summer?

Anyway, I gotta get outta these jeans and put on something respectably business like and git to a meeting. What say we put some champers on ice, or maybe hire ourselves a drop dead gorgeous barman who can make the perfect cosmo - for when I get back...

I know your in winter now, hard to believe isn't it?

We are in summer, but this year we have had cold weather for us, around 20C and lots of rain.

What's 'bocconcini'?

It means 'little mouthfuls' in Italian. A soft, white, mild tasting cheese traditionally made from water buffalo milk, a bit like mozzarella.

Here's a wikipedia thing with a picture.

Bocconcini - Wikipedia, the free encyclopedia

They're sold everywhere here and I use them sliced on pizzas or in salad.. where you slice them between slices of tomato and a basil leaf (the colours of the Italian flag). A drizzle of balsamic vinegar completes this simple but fantastic salad.

(PS Sorry I got a bit lyrical there, it's nearly supper time and I'm hungry!! I could murder a plate of that... the bread and oil and a good bottle of red wine)
