I do think that you got most of that correct. However, the gospels now in the Canon were written between 65 and 100 CE. Thus the earliest Gospel was written some 40+ years after Jesus death.
The final Canon of Scripture was put together in about 376 CE. Anything written after that is not included.
There were indeed many gospels written. During the counsels all of the gospels were considered. The ones chosen were felt to best present the message that JEsus had given. Basically they were chosen by a vote.
Paul began to write in about 40 CE which places his writings closest to the historical Jesus in time.
