My latest interest is finding recipies for use in my slow cooker. So, here is a thread for us to share.

I will start

MANHATTEN CLAM CHOWDER

INGREDIENTS:

5 to 6 sliced bacon, diced

1 cup chopped onion

2 carrots, thinly sliced

3 ribs celery with leaves, thinly sliced

1 tablespoon fresh parsley, or 1 teaspoon dried

1 large can (28 ounces) tomatoes, broken up, undrained

1 1/2 tsp. salt

Black pepper

1 bay leaf

1 tsp. dried thyme

3 medium potatoes, diced

2 or 3 cans (6 to 7 oz each) minced clams with juice

1 bottle (8oz) clam juice

1 tablespoon flour blended with 1 tablespoon melted butter or a little of the bacon grease, optional

PREPARATION:

Fry diced bacon until crispy; drain and transfer to 3 1/2-quart or larger slow cooker/Crock Pot. Add remaining ingredients to the slow cooker/Crock Pot; Stir to blend. Cover and cook on low for 8 to 10 hours

I love cooking with my crockpot espicially in the summer. My favorites to cook in the crockpot are bbq'd ribs. I don't really have a set recipe, I just usually marinade them to what my tastes are for that day. Sometimes it's sweet and spicy or just plain bbq. :wah:

But here's my secret for ya, apricot preserves and honey are great sweetners to rub all over your meat before your dry rub. It helps keep the dry rub to stick better. :D

Sheryl, that is interesting. We have lots of honey here, as a friend of Rick's used to keep bees, and gave us a bunch of jars. I will have to try that tip.

I make my ham, green beans, & potatoes in the crock pot. It's easy! Just put the ham in the crock in the morning on low, let it cook all day, til you get home. I turn it to high when I get home. Then take the ham out & cut/tear into pieces & put back into the crock. Then cut up the potatoes & add. If I'm running late, I boil the potatoes separately, then add. Then, add 1 or 2 cans of green beans, depending on how much ham & potatoes you've added. Warm, til the beans are hot, then serve.

Everybody probably already knows how to make this, but I LOVE IT!!! :p
