Buckets of vegatables...

I had to go help pick the garden at my mother and fathernlaws house this morning. I'm now home with 2-5 gallon buckets of cucumbers, 2-5 gallon buckets of zuccinni and squash, 1-5 gallon bucket of black eyed peas. I also had a sack filled with tomatoes, peppers, and okra. I think I'm gonna be busy for awhile.

However I have a question. What is the best way to freeze squash and zuccinni? Some of it I know I'm gonna put in the food processor to use for baking. But I'm wondering bout the squash that I'll want to use for frying or baking later.

The squash I would slice up in whatever form you will eventually use

it, and then you can "blanch" it... do you know about that? Then freeze

in flattish Ziploc bags...



I have also just sometimes shredded it (food processor) and frozen

it that way without any blanching first. Sometimes you will get a

little moisture out of it when you defrost, but paper towel blotting

should take care of it.

Thanks Valerie. We've lucked out and had a great garden this year. Won't be long and we'll be picking the crowder peas too. :D

Here is an idea for the peppers. Roast them and then freeze them. You can either do them on the grill or under your broiler. Once they are roasted, let them cool and then remove the stem and seeds, and peal them. the roasting will have loosened the peel. Then cut them up. You can either put them in a ziploc bag plain, or mixed with a little oil & seasonings. They come out great. Time consuming, but worth it.
