Pancakes

It's Shrove Tuesday today for the religious amongst us. It's pancake day anyday for the rest of us.
Basic Pancake batter
makes six
120g (4oz) plain flour
pinch of salt
2 eggs
210m (7fl oz of milk
90m (3fl oz water
1 teaspoon of veg oil, I aways use marge
Method
Put the flour and salt in a bowl and mix.
Make a well in the centre and crack in the eggs.
In a separate bowl mix together water and milk.
Beat eggs into flour with a wooden spoon and gradually beat in the milk and water mixture to get a smooth liquid the consistency of cream. Stir in the oil or marge or butter whatever, and allow for 30 minutes before using.
To cook pancakes, melt a little butter in a very hot pan and add about 2 tablespoons of the batter, swirling the pan around so it spreads around the base evenly.
It should take only 30 seconds or so for the pancake to cook, you'll see little bubble on the surface that indicate it's time to flip up.
Put on music CD of Pomp & Circumstance by Elgar while making Pancakes.
Lemon and suger to taste.
