This is a cut of meat that you will not find every where and is one of my favorites, in fact, it's on the grill right now. You guys in the UK are in for a real treat as I'll bet this cut of meat is not readily available to you. I could never find it in New Zealand and had to take this attached sheet to the butcher.

And is it sliced thin and eaten with aus jus or in what manner is it served?

It can be sliced, diced or eaten in any fashion you like. Yesterday I had it with "Bullseye" sauce and just dipped pieces of meat in the sauce. Today I had it on toasted sour dough bread with brown gravy. It's a cut that you sure do not want over cooked.

It will be available, but perhaps not normally cut like that. It seems to be a bit of flank. What did the NZ butcher call it?

Yes---and I love it as well-----------Tri Tip is just another cut of meat that's a bit different.

We have this a lot in the desert Southwest. Had it Sunday in fact. And we have carne asada, which is marinated skirt steak that is used for tacos, burritos, etc. When I lived in PA. before moving here I tried to buy it in the supermarket and those people didn't understand what it was. Just as people out here didn't know what chipped ham was.
