ahhh... pasta.. yummmmmm...okay.. a quick and easy for them summer days...

4 large ripe tomatoes.. coarsely chopped...

3 cloves minced garlic

1 small sweet onion finely chopped..

1 small hot pepper finely chopped (optional)

40 leaves fresh basil shredded ( I never count)

scant 1/3 cup good quality extra virgin olive oil...

Mix everything in a non-reactive bowl.. stainless prefered... or a good ceramic bowl... cover and let sit on the counter all day...

that nite.. cook off a pound of pasta.. drain and mix with sauce while pasta is still steaming..

Pass the grated parm or romano cheese..

Serve with a good crusty Italian or French bread and green salad..

done..

lady cop's Rasta pasta ~~~~~ buy some "jumbo" shrimp. get 3 peppers, red, green and yellow , cut into strips. saute the peppers and shrimp in olive oil & some fresh smashed garlic. add a pint of heavy cream and lots of freshly-ground pepper. pour it over cooked angel hair pasta or fettucini. FANTASTIC ~ DELICIOUS~ yummy:)

buy some gorgonzola, stilton or danish blue cheese ...melt it with cream in a small saucier~~~add more fresh ground pepper! pour it over cooked penne regate. very intense flavor, good as an appetizer, just a small amount.

This is really, really simple and I love it. Boil up your pasta. Then mix up a tin of drained tuna, a tin of Campbells Onion Soup (or mushroom will do either), a tin of sweetcorn (you can leave this out if you don't like it) and grated mozzarella or cheddar, with lots of black pepper. Heat until the cheese has melted then toss the pasta in. Delicious, and like I said,so simple, ;) Enjoy!

and for all you carb counters out there.. try the Barilla plus brand of pasta.. I am not huge fan of whole wheat pasta .. don't like the texture and it is a pain to cook.. but this is good stuff here.. and good for ya..

Flour some chicken pieces

sautee in butter until done and remove from pan

throw in vegies of your choice - mushrooms, broccoli, onion, bell peppers etc.

sautee until just under done

add chicken

add juice of 1 or 2 lemons

add enough white wine or chicken stock to thicken the flour (gravy basically)

serve over favorite pasta

So Easy a guy can do it

--------------------------------------------------------------------------------

Very easy. You just put in 3, 4, or 5 chease Tortolini(SP) into Boiling water. A bit of salt but it still seems to work okay if you forget the salt. Cook for 5 to 8 minutes depending on what brand you buy. Then you drain it. Poor cold water over it. Drain it and ad the pesto spices which are in olive oil sold near the pesto pasta.

When my wife then girlfriend mentioned a non red sause pasta dish I did not think I would like it. But I love it.

And it is more special since I never had it before meeting her.
