I love Stir Fry and could have it almost every day. This meal (about to be stir fried) has chicken, fresh ginger, celery, fresh garlic, yellow and green squash, red and green peppers, onion, olive oil,
egg plant, soy sauce--------served over a bed of Basmatti Rice. I will vary the meal with diced pork or beef and use various sauces.

I'm the same as you.... I sweat down red and green chilli's with scotch bonnet, finely chopped red onions, grated ginger, a whole bulb of garlic, celery, red and green peppers and mushrooms as the base In butter and olive oil.
Then fry off my pork, chicken or lamb then add some fresh beanshoots and then thread noodles that have soaked In hot salty water .
I often make my own sauce out of mango chutney, sweet chilli sauce, honey, touch of balsamic vinegar and olive oil.
An alternative stir fry my husband enjoys Is adding shredded cabbage, chopped broccolli, Aubergine, cauliflour Instead of the peppers and at the last minute wilting some fresh spinach leaves and water cress.
