Chocolate Balls

If anyone here loves peanut butter and chocolate, this is the recipe for you, they are balls then dipped in melted chocolate.

These are to die for!

makes 40 - 50

6 2/3 C icing sugar/powdered sugar

3 1/3 C smooth peanut butter

3/4 melted butter

5 C rice krispies

5C semi-sweet chocolate chips

put peanut butter and powdered sugar in bowl, melt butter and blend until peanut butter is smooth..mix with hands at end if its to hard.

add rice krispies, I use both hands and just squish it all in together as mixture is hard.

cool for at least 2 hours in fridge, makes mixture much easier to work with.

coat hands with butter often and roll into balls....place toothpick in each one.

place on parchment paper on cookie sheets

put in freezer for 24 hours.

next day: melt chocolate

I don't have a double-boiler, so I use a deep skillet, boil water, take if off the stove. if any water gets into the chocolate, it is ruined.

set a heavy bowl (you want it to be heavy so it does not float) of chocolate chips in the boiling water until they melt, carefully making sure no water touches the chocolate...I wait a bit, and stir them until melted.



-dunk balls in chocolate and use a small spoon to cover them over with,(if chocolate becomes hard, return it again to the hot water) return to parchment paper and freeze overnight.......or at least until fully frozen.

- eat at room temperature.
