Tonight we went out for dinner and I had steak and sweet potato french fries, I have never had these OMG THEY ARE GREAT

Ive seen these and entertained the idea of trying them but I got scared.

A sweet potato goes great with a char broiled steak. Why cant I just have the whole potato. Plus you can dredge them with sweet cream butter and a sprinkle of brown sugar. What are the advantages of the potato being sliced and how do you compensate for the lack of skin ?

Are they crinkled ? Do you dip or does the fry speak for itself ?
