World's Best Ginger Cookies
these are especially good during the holiday season, but i wanted to post it and can always bump it in october! :yh_pumpkn :yh_pumpkn :yh_pumpkn ....this cookie is very crisp, large, aromatic and spicy. when you bake them your home will be redolent with a can't-resist scent of spices.......so here is my recipe, if you try them, let me know what you think ...you need an electric mixer, like a kitchen-aid....................in the mixer bowl mix up the following: 2 cups sugar.1 1/2 cups shortening. 2 large eggs. 1/2 cup dark molasses. 1 tsp. salt. 2 tsp. baking soda. 2 tsp ground ginger. 2 tsp. cinnamon. 2 tsp. ground cloves. dash of mace. DON'T SKIMP ON THE SPICES, AND DON'T LEAVE ANY OUT. once it is blended start adding 4 cups of flour, sometimes i need more. you want a dough you can work with, not too sticky. heat oven to 350 degrees F. grease cookie sheets and have cooling racks and a spatula handy. ~~by hand roll one and one-half inch balls of dough. take a glass and dip the base in sugar. use the sugared glass to press the dough balls semi-flat. that gives the cookies a bit of sugar on top when done. bake for about 15 minutes. remove to cooling racks with spatula and let them set, they will be crisp when cool. ~~~i promise you will love them! :yh_drool they also pack and ship well.

The ginger snap recipe I have is quite good, but nothing I"ve tried has enough spices. This looks like it will do the trick nicely. Would like to make some soon but don't know if I'm going to have time on the Fourth weekend...

LOL

If you guys/gals like spicy desserts try this its very very good !
Carrot Cake
2 cups flour
1 1/4 teaspoons salt
1 teaspoon ground cloves
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
2 cups sugar
4 eggs
1 cup melted butter or oil (we used canola oil)
2 cups finely grated carrots
1 cup raisins
2 cups crushed pineapple (you'll need two 20- ounce cans, drained)
1 cup walnuts
Preheat oven to 350 degrees.
Sift together dry ingredients, set aside. Mix eggs, sugar and melted butter, stirring well. Pour into three greased and floured 8-inch cake pans. Bake for 30 minutes. Let cake cool to room temperature. Frost with cream cheese icing.
Cream Cheese Icing
8 ounces cream cheese (softened), see note
6 tablespoons butter
1 1/2 teaspoons vanilla
5 1/4 cups confectioners sugar, see note
Beat cream cheese, butter and vanilla until smooth. Gradually add sugar. Beat until fluffy.
Note: The recipe called for 9 ounces of cream cheese -- we went with 8 ounces. We found we needed only 4 1/2 cups sugar, but if you like a sweeter and thicker frosting, add more.

If Im not mistaken this recipe was passed around Bloomingdales where my mom worked.. for years. ) My sister an I have been looking for it. The cake is delicious. Thanks.

Thanks LC!! Can't wait to try this recipe!! And I must say the "baking weather" has definately arrived here in St. Louieee!!! Oh, we are averaging 45-58 degrees this week!! Chilly!! Just turned the heat on!! Today I made a batch of Snickerdoodles and sent a plate of them next door to neighbors to cheer them up. By the way....guess i never heard of mace as a spice???
