Best fudge recipe... (you'll want to make this!)

I finally made this about 3 days before Christmas. I was waiting for the rain to stop. Somebody, probably my mother, told me not to make fudge when the weather was damp. I don't know if there's any truth to it (how could See's and other candy makers survive if that were the case?) but my fudge didn't quite set up right. I followed instructions exactly. If I keep it in the fridge it stays firm enough to cut but I can't keep it at room temperature. It tastes wonderful though and everyone who got a taste agreed. Great recipe.

Awesome! I've learned that the older I get, I feel absolutely no shame for throwing a semi-rude suggestion out there cuz sometimes it works. ;)

I'm sure that this fudge is brilliant but I have a problem.

I'm lactose-intolerant and haven't found condensed milk that I can take yet.

Does anybody have a "second-best" recipe without it? :)

Welcome, Squid. My husband is lactose intolerant, too, and when he wants a piece of

fudge, he just takes a dairy digestive tablet with it and he's fine. Have you ever tried

those? Lactaid or similar? If not you might try and see if you can work it out that

way. Offhand, I'm not familiar with any fudge without some sort of 'milk' in it.

I do have the tablets but they are quite expensive and eating them all through christmas would make me a very poor Squid.

I can get hold of almost all fresh dairy-products as lactose-free but not condensed milk so recipes with cream works fine for me.

This is my first attempt at making fudge, so i need some help please.

How much butter is two cubes? is it salted or unsalted butter?

Hi there, 918! Sorry about the two cubes bit, I revised further along

in the thread, but here it is again... two cubes = two STICKS, that's

right, half a pound of butter, I've always used the salted but I'm

sure you could use the un if you prefer!
