I make Elderberry wine every year. About a dozen bottles. None of the pretend stuff from a sachet. Proper fruit. Ready for Christmas, along with the Sloe Gin. We give most of it away.

Last years was better than this years. 2011 was a good vintage

Very cool Snowfire. How do you make this wine. I'd love to try it if you don't mind.

It starts with taking all the small berries off the plant with a fork which takes forever.

You need about 1.5k of berries to the same weight of sugar and about 1.5 litres of water

Heres one recipe thats just about the same as ours....

Winemaking Recipe for Elderberry Wine, How To Make Elderberry Wine: Wine Making Guides

Racking the wine simply means siphoning from one demijohn to another. The whole process takes a few months but the results are really good.

If Elderberries arent available just about any fruit or vegetable will do. Our friends turnip wine tasted like a very good sherry

Usual stuff like elderberry, rhubarb and parsnip but they also made cowslip and dandelion wine which Involved us as kids hiking over the Sussex Downs picking cowslips which we got paid a groat per sack. not sure If you're allowed to pick cowslips any more.
