Fish Skins

I broiled a two pound Salmon tonight and discovered that the crispy salmon skin was delicious. I made sure the fish was not over cooked and added a bit of heat to the skin side. I got to wondering what other fish skins would taste like if cooked crispy.

Most white fish, not so good. the oily fish is best.

Mackerel is pretty tasty.

Dolphin (Mahi Mahi) can be really good.
