Grasshopper Pie

Post by libertine »

This recipe is the reason for the quesiton about whipped cream. Probably will use REAl cream,,,it always works

18 oreo or Hydro crrokies

1/4 cup butter or margarine

crush cookies , melt butter and mix into cookie crumbs. Butter a 9" pie plate. Pat the cookie crumb mixture on the bottom and sides to make a crust. Refrigerate (or freeze) to set

Melt

25 marshnallows (or 2.5 cups of small marshmallows[pressed down firmly]}

2/3 cup milk

in a double boiler

cool to room temperature

add (fold in) 1 oz. creme de menthe

1 oz creme de cacao

whip 1/2 pint whipping cream to medium stiff

fold marshmallow mixture into cream carefully

Pour into chocolate crust and refrigerate to set...freezes well. Can be kept in the deep frees for about a week.

If the marshmallow mixture is too warm when you add the liqueur they will separate.
