I have never been a soup eater. However, in the past several years I've started making a Chicken, Vegetable and Noodle Soup which everyone here loves and begs for.............................

In this coming year I'd like to add some others to my menu. Please post your very best tasting and most favorite soup receipes for us to steal.

Thought you might like this recipe, future soup lady of the year....;)

RECIPE FOR A HAPPY NEW YEAR

Take twelve whole months,

Clean them thoroughly of all bitterness, hate and jealously.

Make them just as fresh and clean as possible.

Now cut each month into twenty-eight, thirty, or thirty-one different parts,

But don't make up the whole batch at once.

Prepare it one day at a time out of these ingredients.

Mix well into each day one part of faith,

One part of patience, one part of courage,

And one part of work.

Add to each day one part of hope,

Faithfulness, generosity, and kindness.

Blend with one part prayer, one part meditation,

And one good deed.

Season the whole with a dash of good spirits,

A sprinkle of fun, a pinch of play,

And a cupful of good humor.

Pour all of this into a vessel of love.

Cook thoroughly over radiant joy, garnish with a smile,

And serve with quietness, unselfishness, and cheerfulness.

You're bound to have a Happy New Year!

Cheesy Chicken Corn Chowder



1 half chicken breast

1/2 cup water

1 can cream of chicken soup

Cook chicken and water in covered pan - add diced onion to taste - until chicken is cooked through. Remove chicken.

Add can of soup and enough milk to make soup creamy. Add some corn to taste. Cook on low while you skin, debone and cut chicken into bite size pieces.

Add chicken to soup. If the soup is warmed through, then add shredded chedder cheese to taste and continue to cook until cheese is completely melted

I have been known to triple the recipe and so long as you remember to use 1/2 cup water and one can of soup for each breast you are good to go. Personally, I like lots of corn and cheese, but DH prefers a bit less corn so I make it accordingly when I plan on sharing. :D

Now, if someone could direct me to some crock pot recipes to try in my new crock pot, I would be eternally grateful. :)

Split Pea. I make a big pot once a year. I buy a good smoked ham and when its getting near the bone making sure to leave ample ham its soup time. I dont have a set menu I wing it.

1 bag of dried split peas rinsed well. (let them soak in cold water for several hrs or overnight in the fridge)

Large can of chicken stock

Celery

Diced or whole new potatos

Carrots

1 onion

Bay leaves (2)

Pressed garlic (2-3)

Fresh gr pepper

Salt

You know what ? Throw it all in a pot at one time cover it cook it on low all day stirring frequently

When all the meat has fallen off the bone discard it

(the chicken stock adds much more flavor than using water)

feel free to freeze in portions

I make a ham and bean creation that even my 2 and 4 year olds love.

Ham

2-3 cans of beans (I like navy beans)

1 onion

garlic (I like tons of it)

a few potatoes

a few carrots

seasoned to taste (I usually put in salt, pepper & paprika)

Throw all that in the pot, cover with water and bring to a boil then reduce heat to a simmer.

It's ready in about an hour for a soup or let it simmer longer for a stew.

I serve it with fresh corn muffins :)

Now I want some!

My two favorite homemade soups are Turkey Noodle and Beef Stew (not really soup) out there in restaurant/grocery storeville... I like cream of broccoli and baked potato soup yummmmm

Turkey Noodle couldn't be simpler... you boil down whatever's left from the turkey... cool, pick out the bones and gunk... add water... making sure not to water it down too much... add chopped carrots, onions, garlic and celery... suimmer for 2 hours... then add your noodles toward the end... making sure you don't soak up all the broth... YUM!
