Meatloaf

Occasionally I get a craving for meatloaf. I still havent found a topping Im crazy about. I dont care for straight ketchup cooked on it, I was thinking of mixing some ketchup w/ bbq sauce and glazing it. Any better ideas would be welcomed.

From my 1959 cook book (the mom on the cover is wearing a frilly apron,

really)



Here 'tis... if you want the meatloaf one too lemmee know



Mushroom Cheese Sauce

1/3 cup butter 1 3 oz can sliced broiled mushrooms

1/3 cup flour (Tamsen recommends B 'n' B's ;) )

1/2 tsp onion salt 1/2 cup grated Parmesan cheese

1/2 tsp paprika 1/2 tsp Kitchen Bouquet

1/4 tsp celery salt

2 cups milk



Melt butter over low heat. Stir in flour and seasonings. Add milk and contents

of can of mushrooms. Cook on medium heat, stirring constantly, until

sauce thickens. Stir in cheese and Kitchen Bouquet. Makes 2 1/2 cups.

That sounds good. I like the mushroom and parmesan. Ill try it thanks.

I worked my shifts plus another bartender's who is very sick. 65+ hours this week, 8 straight days. The boss gave me Friday and Saturday off out of pity. I was forgetting how to add up two beers by 0100 this morning, I'd worked so many shifts in a row.

I may not even have to work Sunday, and with the weather being what it is, I'm not gonna if I don't have to!! I'll be blazing 'round the twisties on Jefferson along the water.

Ahhh thats good. You gotta get away sometimes. I used to fuel airplanes in Fl. I had signed up for some overtime and then someone called in on the overnight shift so I took it. I ended up working 36 hrs straight and I was a complete idiot, I couldnt think at all.

I am numb, and my brain is shot listening to these feakin' idiots with their same conversations, and the same drunken ramblings about nothing and their stupid drama. I want to sit them all down and say, "Listen, you guys think YOU have problems with your $1500 mortgage and your Jaguar that keeps breaking down? Let me tell you a story about a man who defended himself last summer and saved a friends life and is now going to court on Murder 2 charges." I'm so sick of their pathetic whining and it just gets worse the more they drink. I threw a guy out last night just because the sound of his voice was making my teeth itch.

Have u tried the ol snow cap meat loaf thing?? Mashed potatoes and melted velveta cheese-throw it on top and bake it till the cheese melts..! My kids love it!:-6

Try this meat loaf... forget about glazes. Ive been making it for 25 years. It is not only delicious... but beautiful enough to serve at a dinner party. People love it.

Chop meat.... Nothing less than ground round

salt, pepper,parsley, Lots of fresh chopped garlic.

Itallian style bread crumbs, eggs.... half cup of ketchup. quarter cup or little more of milk for moisture. Oops I forgot... parmesan cheese.

Sqeeze... combine.... roll the meat out on a large piece of waxed paper.. like a pizza dough.

Lay and spread on top.... chopped, well drained spinach. Grated motzarella over the whole thing. Pick up the edge of your waxed paper, and roll the baby up.

Pinch the ends closed. It should be quite huge.

In the oven, and viola!!!

You beat me to it, LC. :wah: I was going to say that in the 70's Meatloaf was really popular served on a really loud stereo with a little pot on the side, but I won't do it. Nope. Can't make me, either.
