yesterday my butcher had tiny lamb shanks. i never saw anything like that before. so i bought a few. i am thinking about braising them with some garlic and rosemary. what are you cooking?

You will not be disappointed. The small shanks are the best and vey tender. They come from lambs that are under one year. Older sheep, chops, loins, shanks are not as good in my opinion.

Are you sure you are getting LAMB and not mutton? I ask because
a lot of people who have eaten older animals don't care for it...
Apparently the high lanolin content in older meat can make it taste
"off" to people.
Just a thought. Talk to the meat cutter or butcher where you shop.

I love lamb shanks, the meat just falls off the bone. Lovely with mash, peas and loads of onion gravy.
