I always thought you should, till I moved here. In the states they keep them in the cooler case at stores. But here they are just on a shelf, like bread.

And what about the color! I notice the eggs here are all brown! In the states they are white!
But they dye up just as nice here, for easter. Better actually! Go figure.

Eggs should never be kept in the fridge if your baking cakes with them, but they are fine for anything else.

For some types of cooking you should remove the eggs and allow them to
come up to room temp, but otherwise they should stay in the fridge.
In California it's a law.
Brown eggs are no better or different than the white ones, they just
come from a different type of hen!
Eggs will generally keep up to a month in the fridge. They should be
stored in their original packaging, not taken out and put in the holder
that came with the fridge! (Not too many do come with that holder
any more, that I've seen!)
Eggs that are a few days old hard cook better than absolutely fresh,
when fresh the membrane clings too tightly to the shell!!
Want to tell if an egg is cooked or not? Spin it. Cooked eggs spin
in an even fashion, uncooked wobble.
That's it in a nutshell! (Huh?)

Yeah, I noticed that in Ireland too! They're out on a shelf in the store but it seems that everyone keeps them in the fridge at home!

When I lived in the States I found most people stored everything in their fridge. I think its because your temperatures are generally hotter than ours and so you have a lot more bugs and insects. A lady I knew in New York even kept her sugar in the fridge because it kept the ants out. I think they used to have trouble with cockroaches too and keeping stuff in the fridge was the only way to keep those lil suckers out!
I usually keep eggs in the fridge, unless I know I'm going to be using them.
I left them out today and made a huge batch of fairy cakes for the kids supper tonight. I love my mixer! You just chuck all the ingredients in and whizz it up! No mixing, stirring, folding, blending or whatever. Just chuck, whizz and bung into cake cases. I put a ton of chocolate buttons in them too. I've now got so many that I had to store a load in the tin for the rest of the week. Yummy! Cakes straight from the oven are delicious when they're hot............and no preservatives too! mmmmmmmmmmmmmm....................................

I just merged the eggs and butter, tossed in some sugar and a few secret ingredients, whipped up some cream for topping, dug out some cherries and mugged Chockoholic.. and voila!!! Tuck in !!!
