Title: Mexican Chicken
Description:One meal dish that can be taken to family get togethers, office luncheons, or served at home for compliments galore!
Ingredients:1 Package of Soft Flour Tortillas1 Chicken (boiled) (Reserve the liquid) ***1 Onion (chopped)1/2 teaspoon garlic powder1 teaspooon Chili Powder1/2 pound cheddar cheese (grated)1 Can Rotel Tomatoes & Green Chilis (as mild or as hot as you like)
1 Can Cream of Chicken Soup
1 Can Cream of Mushroom Soup
Directions:Cut Chicken into bite size pieces. While preparing chicken soften tortillas in hot boiling chicken stockMix the Chicken, Onion, garlic powder, chili powder, cheese and Rotel togetherLine a 13" x 9" x 2" baking dish with the softened tortillas. Add the chicken mixture and cover with the soups.
Bake in a 350 degree preheated oven for 35 minutes
(***If you use canned chicken-you can soften the tortillas in one can of boiling chicken broth soup)

Ingredients:
1 Small Can Frozen Lemonade
2 Cartons of Cool Whip 1 12 oz for the Pie 1 8 oz for the topping
1 Can Eagle Brand Condensed Mill
1 Graham Cracker Pie Crust
Directions:
Mix Frozen Lemonade and Eagle Brand
Fold in Cool Whip (12 Oz)
Put in Frig 6-8 hours or overnight to Chill
Top with 8 oz Cool Whip
Number Of Servings:2 if you are Greedy 6 if you share
Title: Lucille's Cornbread Salad
Ingredients:
Pan of cooked cornbread
bell pepper
celery
green onion blades
2 boiled eggs
ham, diced in cubes
mayonaise (or salad dressing)
Directions:
Crumble cornbread in bowl. Add other ingredients as you like them. Add just enough mayo to make it stick together some (you don't want it mushy).

Cathy's Taco Casserole
Description:Easy main dish or a meal in itself. Add a salad (guacamole is great) and you are set. This is popular with kids too.
Ingredients:1 lb. ground beef1 small onion, chopped1 can green chilis, chopped1 package taco seasoning mix1 small can tomato sauce1 cup watertortilla chips (broken into bite size pieces)grated cheese for topping* 1 can rotel tomatoes (hot as you like them) can be substituted for the green chilis. You may need to cut down the amount of water you use or increase the amount of chips.
Directions:Brown the ground beef in skillet (I use a cast iron skillet so I can use one pan for the oven as well). When the beef is just about done, add the onions and finish cooking until onions are clear. Drain fat.Add the taco seasoning directly to meat and stir well (the fat left on the meat will keep the taco seasoning from clumping when fluids are added). Add green chilis (or Rotels), tomato sauce, and water. Bring just to boil, cover and simmer for about 15 minutes, stirring occasionally. Add tortilla chips and mix well. The amount of chips added will determine the consistency of the dish...the more you add, the dryer it will become. If you are not using an oven-safe dish, you will need to pour mixture into one. Top with grated cheese and put into oven (350) until cheese melts and casserole begins to bubble again. Serve immediately.
Note: Taco seasoning and chips usually contain enough salt for the dish so use caution if adding extra salt.Number Of Servings:6 normal people , 4 men, 2 big men, or 1 teenage boy

Description:Delicious way to enjoy Corn. A real favorite at family get togethers.
Ingredients:1 Can Whole Kernal Corn
2 Eggs2 Tablespoons Sugar2 Tablespoons Flour
3/4 Cup Grated Cheese (I use grated Velvetta)
1/2 Cup Melted Butter
Directions:Slightly beat eggs Add Corn (undrained), Sugar and Flour--Mix Well and Stir in Cheese and Melted Butter. Bake in 350 Degree Oven for 30 minutes.

Pre-heat oven to 200, open frozen chips ( must be frozen for best results ) spread evenly on a baking tray, place in centre of oven, shake tray after 10 mins, return to oven & continue cooking for a further 10 mins.
Remove from oven & place on warm plate, sprinkle a little salt & vinegar on them & enjoy, Mmmmmmm.......lovely.

Cassie's Easy Peach/Raspberry Cake
Lemon cake mix of your choice to make 2 rounds cakes - follow directions on package for baking and let cool.
When cool carefully slice cakes through the center to make 4 layers.
3 or 4 large ripe peaches and one large can of sliced peaches in syrup
Open the can of peaches and throw the peaches away retaining the syrup... pour the syrup in a pot and place on medium heat.. dissolve 1/2 teaspoon of cornstarch in a little water to make a paste... add 2 teaspoons of lemon juice to paste and then add the cornstarch mixture to the peach syrup. Bring to a boil for 2 minutes. Let cool.
Peel your peaches and slice them.. when the peach syrup has cooled add your sliced peaches to it and toss them around until coated lightly.
On a cake platter put the bottom layer... cover with sliced peaches.. then place the next layer of lemon cake... on top of this I spoon real whipped cream and cover with fresh raspberries. add your next layer of cake, cover with peaches... add your top layer of cake.
Completely ice the entire cake with fresh whipped cream, top and sides.
In the center of the top add some sliced peaches and raspberries for garnish.
Cover and chill this cake for a good couple of hours so it sets together.
Enjoy.
