Almond Paste

Ive never used it.

Im a big almond flavor fan.

How would one apply this in a baking recipe ?

I really don't know, Nomad. Isn't almond paste what they make marzipan out of? :confused:

This is the most useless of posts but I ought to make it anyway. In England you'd use almond paste for making Simnel Cake and not a lot else. Using almond paste is more the job of your Italians.

If you read this you'll see why it's not a useful post.

Almond Paste Treats recipe

1/2 cup butter

1/2 cup shortening

1/2 cup brown sugar

1/2 cup granulated sugar

1 egg

1/4 teaspoon salt

2 cups all-purpose flour

1/2 teaspoon baking powder

Filling:

1 cup almond paste

3/4 cup granulated sugar

2 eggs

1/4 teaspoon salt

2 teaspoons almond extract

Mix butter, shortening, sugars, egg, salt, flour and baking powder in order given. Put 1/2 of this mixture into a 9 x 1-inch pan and pat down.

Mix filling ingredients in order given and put over dough. Flatten chunks of remaining dough and lay over the filling. Bake at 325 degrees for 50 minutes or until golden brown.

OR

Almond Macaroons recipe

1 (8 ounce) can almond paste

3/4 cup granulated sugar

Pinch of salt

3 egg whites

1/2 teaspoon almond extract

Break up and mash almond paste to soften; add other ingredients alternately and beat well. Line a cookie sheet with brown paper or foil.

Squeeze small amounts of dough through a pastry tube or drop from a teaspoon 2 inches apart onto cookie sheet. Smooth tops with pastry brush moistened with water. Bake at 350 degrees F for 15 to 20 minutes or until golden and puffed. May be stored indefinitely in an airtight tin or freezer.

Makes 40 to 50 macaroons.

OR

Almond Meltaways recipe

Yield12 dozen 1 3/4-inch cookies

4 ounces almond paste

3 cups confectioners' sugar

4 eggs

2 cups (4 sticks) butter, softened

5 3/4 cups cake flour

Heat oven to 375 degrees F. Line cookie sheets with parchment paper.

In large bowl, combine almond paste and sugar; beat well. Add the eggs one at a time, beating well after each addition. Add butter; beat until light. Add flour; mix until smooth.

With No. 4 star tip, pipe onto paper lined cookie sheet in desired shapes. Bake for 6 to 8 minutes or until edges are light brown and centers are set. Do not over-bake.
