Supper Club.

I belong to a Supper Club ... a group of friends who try to get together once a week for supper at a different member's home.

We have decided to make one evening an "egg supper" where the main ingredient must be egg of some kind.

Does anyone here have any nice egg supper recipes?

What about some kind of quiche, JJ? They're usually easy to prepare and with a salad make a good supper! I'm partial to broccoli & cheese.

Coincidentally, I happened to see a recipe in the Toronto Star yesterday for hard boiled egg cookies.Seemed odd to me, but they were a favourite of the writer, just like her bubbie made when she was a little girl. Sounds like it would make a nice bit of dessert.

This isn't the Star recipe, but it looks easy to make:

Sliced fried taters

fried bacon crumbled

a few diced onions

all in one pan toss in scrambled eggs



I call it stuff



cause everyone always says "man this stuff is good".

Fried shrimp with eggs!

kinda like green ham and eggs :wah:

1 1/2 lb shrimp, peeled and deveined

2 tbsp soya sauce

2 tbsp lemon juice

1/4 tsp paprika

2 tbsp veggie oil

2 beaten eggs

Place shrimp in a large bowl. Add soys sauce, lemon juice & paprika; marinate 15 minutes.

heat oil in large frying pan. Meanwhile dip shrimp in beaten eggs and add to pan. Cook shrimp 2 minutes each side over medium heat and season with salt, pepper or seafood seasoning. When done drain on paper towels and serve with plum dipping sauce.

Would go good with fried rice with egg and some stir-fried veggies.

I think this is too healthy for your supper club :lips:
