Refigerate. Soften in advance when desired. Homemade right out of the churn on homemade buttermilk biscuits or homemade bread is heaven. Add a ladle of chipped beef and make a meal.

I always refigerate apple butter before use. It's better on buttermilk biscuits when it's chilled. On the flip side, it's also righteous heated, and spooned over homemade vanilla ice cream. Just my thought.

When I worked for a railroad we had to make sure butter stayed at -10F if it was destined for government warehouse. they said that while butter will not actually freeze, it will get rancid if kept near the freezing point. Myself, I keep butter in the freezer and only thaw it for cooking. Otherwise I use smart balance margarine.
Its ok but doesnt spreading become an issue ? Unsightly holes in the bread ? How do you cope with that ? Do you have special techniques for alleviating this bread trauma ?
