Everyone who's ever tasted this has BEGGED for the recipe! ONLY because I'm fond of you all....I'll give it to you without your having to beg. :)

1 cup sugar

1/2 cup light corn syrup (KARO)

1/4 tsp salt

1 1/2 cups dry-roasted peanuts

1 TBL butter (not margerine)

1 tsp vanilla extract

1 tsp baking soda



Combine suger, syrup and salt in an 8-cup glass measure or bowl. Microwave on high for 5 minutes. Stir in peanuts.

Microwave 2-6 minutes or until syrup and peanuts are light brown, stirring every 2 minutes.

Add butter, vanilla and finally, soda...stir until light and foamy.

WORKING QUICKLY, spread 1/4-inch thick on a cool cookie sheet. Let stand until cool, break into pieces. Store air-tight.

It helps if you use a wooden spoon to stir this candy and although it seems messy, cleanup is easy--just soak everything in soapy water.



NOTE: I've used cashews and substituted a heaping tsp of Chinese five spice powder for the vanilla...very good.

Thanks Lulu! I don't really like peanut brittle, but my family does. So I'll have to give this a try. :D

it's good with pecans too....the best part is when i get to stir in the baking soda.......i love to watch it foam............:p
