Nip (!) down to your local unintelligble Far Eastern shoppe, and buy some (it's usually cooked to extinction in the Native Cuisine... imagine an Oriental Mrs. Beeton saying "Soh! Purchace an amount of the pak choi, and boil its' head in 3 gallons of water for 2 hours, with fish heads in and make soup!).
